We stay true to serving the most authentic cajun cuisine for Mardi Gras, so we’re on our way to Louisiana to pick up the crawfish and Camellia red beans. As you all know by now, Mardi Gras falls slightly earlier this year. Unfortunately, it’s been colder than usual down in the Bayou, making crawfish quantities limited.
